Bobal: deep coloured and fruity wines. Produces fragant, intense and pleasant rosés varietals. The cluster is medium-large sized and compact. Berries are blue-black, medium size, uniform and spherical.
Cabernet-Sauvignon: Excellent full bodied wines, fragant with high tannins and great aging potential. Grapes are used to enhace the blend of other red varieties. The cluster is small and berries are spherical, hard and small.
Merlot: deep coloured, rounded and fat wines with spicy aromas. Persistent in the mouth with soft and elegant tannins. Adds softness, aromas, colour and body to the blend. The cluster is small or medium sized and berries are small and black with a hint of blue.
Monastrell: excellent wines, high in alcohol, deep coloured and intense aromas. These wines age rapidly. The cluster is medium sized and berries are small, spherical and black.
Pinot Noir: fragrant and fruity young wines, fresh and velvet in the mouth. After aging, wines become more delicate and aftertaste improves. The cluster is small and compact. Berries are small and colours vary from black to dark violet.
Tempranillo: deep ruby red colours. Very fragrant, varietals, with pleasant and intense flavour as well as a great body and acidity balance. These wines have a great aging potential. The cluster is medium sized and compact. Berries are medium, uniform and blue-black coloured.
Tintorera: deep coloured wines with high alcohol content, balanced acidity and aromas. These wines are blended to improve other varieties. The cluster is small and berries are also small, spherical and deep black.
Other authorised red varieties are: Bonicaire, Cabernet Franc, Forcallat y tinta, Garnacha, Graciano, Malbec, Mandó, Marselan, Mencía, Mazuelo, Petit Verdot y Syrah.
Chardonnay: flavour is rich, complex, fresh and persistent. These wines have a great aging potential and are excellent for barrel fermentation. The cluster is small and compact. Berries are small, spherical and yellow-green coloured.
Macabeo: straw-yellow with green hints coloured young wines with intense fruity and floral aromas, fresh in the mouth and good acidity. Well balanced. The cluster is big and berries are medium sized, spherical and gold coloured.
Malvasía: soft and fruity gold coloured wines, high in alcohol and characteristic aroma. The cluster is medium sized and berries are medium and spherical.
Merseguera: is the main varietal of Valencian wines. Wines are pale yellow with green hints, fine, aromatic, with medium acidity and low alcohol content. Excellent young wines. The cluster is medium-large and berries are medium sized, spherical and yellow-green.
Moscatel: traditionally used to produce liquor wines and blends with other wines. The cluster is large and loose and berries are large and yellow-green. Wines are very fragrant and characteristic.
Verdil: may produce wines with high alcohol content as well as fresh, fruity and fragrant wines. The cluster is medium sized and compact. Berries are medium sized, spherical and gold coloured.
